Moyashi beans are an excellent source of vegetable protein, mainly due to their amino acid profile. usually of easier digestion compared to other beans. In addition, it is super antioxidant, rich in fiber, bioactive components in the fight against inflammation, microbial activities, hypertension, cancer and others.
This is a great option if you don’t like eggs, or have an allergy/intolerance or simply want to learn how to make a different omelet.
Serve with hummus, guacamole, tofu, as an surplus in Super Bowl or it can also become a tortilla or even a flatbread type.
In mine I put guacamole, mushrooms, asparagus, fresh herbs and sprinkled hemp seeds. Now see how to do it!
Preparation method:
1. Leave 1 cup of moyashi beans (Mung Beans) to soak for 24 hrs or until germinate (about two days). In germination the grain is at the height of nutrients and with wonderful digestion!
2. Discard the sauce water, wash the grains with running water and place the beans in the blender. You don’t need to include water because the grain will already be super hydrated!
3. Include seasonings: sea salt, black pepper, thyme, oregano and parsley. It will form a creamy and dense mass, a little aerated.
4. Place in an already hot frying pan greased with olive oil or coconut oil and pour the dough. Spread with a spoon and wait about 2 minutes or until golden! You can turn the side and let it brown.
5. Ready!
*Optional from before item 4 leave the dough fermenting in its sink with a paper towel or cloth for 8 to 24 hours. Then follow in item 4 normally!

1)Soak the Beans for 24 hours. Drain the water and wash the beans.
2) Combine The Beans with You Favorite Seasonings, Herbs, Sea Salt. Blend it (there is no need to add any water) until a smooth and thick consistency.
3) Use avocado oil to coat a regular skillet. When heated place the dough, use the back of spoon to spread the Dough. Switch Sides After 3-4 Minutes.
