If I could choose my favorite dessert or sweet, cookies would be in first place, at the maximum in second! Obviously my list is long, but just to explain my obsession with cookies. I’m always in the struggle to do things that are good for the body and the soul, and this recipe is that, and another one of those you should test!

These cookies I made with almond flour to lower the level of carbohydrates and be able to play with other ingredients, such as dark chocolate and coconut sugar, which in my opinion is one of the best types of sugars in terms of health and flavor. These cookies are gluten-free, grain-free, full of anti-inflammatory agents from cocoa, coconut and almonds and rich in nutrients because the ingredients are very whole.

I say this because these cookies were sensational and if you do it alone (A), you will have to have a lot of maturity so you don’t eat everything at once. Also, as the saying goes: happiness is only true when shared. That is, nothing better than sharing good food, right?

I love a sweetie and I really believe that we can reconcile pleasure, health and flavor, all at the same time. Many people don’t care about sweets, others love it… So, since I’m more for the group of those who love, I never get tired of testing sweet recipes with whole ingredients to satiate the soul in special moments!

These cookies came out of the oven perfumed the whole house. I wanted to finish them off right in the first few minutes, but don’t think that behind these photos there’s no work! Often the recipe comes out and I need to wait for a good light to take the photos, which can be the next day…

Here’s this wonderful recipe, always feel free to change some ingredients! I’m a bad follower of recipes, I always change something. You can change the seeds, add pieces of dried fruit or any other ideas you have if you don’t have any of the ingredients.

Ingredientes:

  • 1 1/4 cup (137 g) almond flour.
  • 1/4 cup (30 g) of dark chocolate or in pieces (I used 70% cocoa). carob for lactose intolerant or allergic to cow or cocoa milk.
  • 1/3 cup (30 g) dry shredded coconut without sugar
  • 2 tablespoons of hemp seeds (for those who live in Brazil, you can use chia)
  • 1/2 teaspoon baking powder
  • 1/4 tsp of sea salt
  • 1/3 cup (73 g) coconut sugar (can be demerara or xilytlol for unsweetened versions)
  • 1 egg (for vegans to use chia or flaxseed gel: leave 1 tbsp of soup to soup in 3 tbsp of water).
  • 3 tbsp of melted coconut oil (45 g)
  • 1/2 vanilla extract tea

Instructions:

  1. Mix all the ingredients in a bowl, except for the egg, coconut oil and vanilla.
  2. In a bowl, beat the egg with a fuê (or even a fork) until it doubles in size and the color is very even.
  3. Add the vanilla and coconut oil to the egg and mix well. Add this mixture to the bowl with the dry ingredients and mix well with a spoon.
  4. Let the dough rest in the fridge for at least 30 minutes (on the website I got the recipe, they gave the option to leave it in the fridge all night).
  5. Preheat the oven to 180°C (350°F)
  6. With a tablespoon, separate each portion of cookies according to the size you want! I made the measurement of a full tablespoon.
  7. With your hands, make balls (as you do with brigadeiro) and then flatten it to be in the shape of a cookie.
  8. Use parchment paper to put it in a shape and put it in the oven.
  9. Bake for 7 to 10 minutes or until the sides darken (dark brown).
  10. Wait for it to cool and enjoy!

to be honest, i am horrible following reccipes, i mean, i never follow the exact same ingredients, either because I may not have some of the ingredients, or just because I want to take a risk and see what will come out of my experience. So, feel free to also change a few ingredients and play around a little bit, use your creativeity!

You can add a few dried fruit pieces, different seeds, sweeteners, etc. or you can simply stick to the same recipe i did here! These cookies bring the perfect balance of different flavors, without overpowering your taste buds.

  • 1/3 cup (30g) of unsweetened shredded coconut
  • 2 TBSP. Hemp Seeds (For those who live in Brazil, can use chia)
  • 1/2 TSP. baking powder
  • 1/4 tsp. sea salt
  • 1/3 cup (73 g) of Coconut Sugar (Can be Brown Sugar or xilytlol for sugar free versions without)
  • 1 Egg or Vegan Replacement Chia Gel (1 TBSP of Chia Seeds Soaked in 3 TBSP of Water)
  • 3 TBSP of Melted Coconut Oil (45g)
  • 1/2 tsp vanilla extract

instructions

  1. In a bowl, Combine Almond Meal, Shredded Coconut, Chocolate Chips, Sea Salt, Coconut Sugar, and Baking Powder.
  2. In a different bowl, beat egg until double its volume. Then add Vanilla Extract and Melted Coconut Oil. Stir it well again.
  3. Combine Both Dry and Wet Mixtures and With a Wooden Spoon, Mix It Really Well.
  4. Place the mixture inside your bridge for at least 30 minutes or more.
  5. preheat the oven to 180°C or 350°F
  6. With the help of a tablespoon scoop out small balls and shape them with your hands, then place them into a baking sheet. Remember to leave space between each cookie.
  7. bake the cookies for 7 to 10 minutes or until the edges begin to get darker.
  8. Remove from Oven and Allow Your Cookies to Cool Down Before Serving
  9. enjoy
