I like simple cake, it started to have a lot of stuffing, ornament, it doesn’t catch my attention anymore. This cake is gluten-free and dairy-free, rich in fiber and will fall apart in your mouth.

Even though I love a sweetie, I always take care to reduce the consumption of sugar in my diet. The truth is that we are a society addicted to ultra-yummy industrialized foods, with thousands of techniques using chemical additives that addict our taste, making us increasingly addicted to foods rich in sugar and salt, otherwise it is \”without flavor\”.

A little bit of nutrition…

I rarely consume an industrialized product, but I am loyal to brands or suppliers that guarantee quality products, with whole ingredients and as little processed as possible. As I have already mentioned in several posts, there is a new market growing, with quality industrialized products, since people are more aware of what is healthy or not, being more difficult to have this \”manipulation\” of large food industries. We have to increase the demand for quality food so that there is more supply.

Thousands of people don’t know how to cook and most don’t cook because they believe it’s something very complicated and that it takes time. But it is not. It’s a matter of priority, of getting acquainted, getting organized and when you least realize it, it’s become a routine!

We have to be smart because capitalism has its cycles, before it was the practicality with the fast food boom and now it’s a bombardment of gluten free or without lactose and so on. Very calm at this time! The cake can be gluten free, but it’s a cake anyway and can be filled with other refined flours or sugar. Therefore, we don’t have to focus on nutritional appeals, but on the list of ingredients, where you can see what the product is made of. Or better yet, do it yourself!

Recipe

Render: 12 muffins or 1 cake

INGREDIENTES:

  • 1 cup organic corn flour
  • 1 cup brown rice flour
  • 1 cup almond milk (or any milk of your choice)
  • 3 eggs
  • 2 tablespoons of chia seed
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut sugar (see other alternatives below)
  • 1 level teaspoon of sea salt
  • 1/4 cup ghee or regular butter (without salt)
  • 1 tablespoon of baking powder

Alternatives to sugar: brown, organic crystal, demerara or stevia (depending on the brand may leave after-taste).

Instructions:

  1. Preheat the oven to 200ºC or 400ºF
  2.  Mix the dry ingredients in a bowl (I like to penerate to mix the ingredients well) and mix well.
  3. In a blender (I use Vitta Mix), mix all the ingredients and let it beat for 2 minutes.
  4. Place the dough in muffin-like shapes or in a frying pan like the one I used in the photo (you can go in the oven). Or in rectangular shapes of bread!
  5. Leave in the oven for 15 to 20 minutes if you make muffins or 30 minutes in the frying pan or pan. As an oven varies a lot, it is worth taking a look after 25 minutes.

This recipe is amazing, specially if you are looking for a Fluffy Cornbread Recipe! It is gluten & dairy free, so a lot of people with sensibilities to these ingredients can enjoy it. a lot of the gluten free & dairy free recipes can turn out dry and far away to be moist. that is why i loved this one, this cornbread will melt in your mouth.

just to remind you all, when you are shopping for a gluten free dessert, from not overeat just because it is gluten free. It might also be filled with gluten free but refined flours and still be high in sugar. instead of going after health claims when buying a dessert or whatever the product you want, seek for the ingredients list so you can see if the product contains whole ingredients or it is another high sugar and refined option.
