I love this recipe, in fact any recipe that involves bananas is delicious in my opinion. I remember that the first time I made it, the banana smell was spreading around the house and I couldn’t even wait to get cold to eat! In addition to being very tasty, it pleases most audiences, regardless of food restriction or lifestyle. It goes well for those who avoid gluten, lactose or cow’s milk derivatives, or adherents of the Paleolithic diet because it is also grain-free. I don’t need to say that I’m not in favor of any kind of fad diet, because that would go against what I believe about nutrition, each one has a different lifestyle, an organism and a different metabolism.
But, back to bread… This recipe I made with flours that naturally have a high nutritional density, with a lower carbohydrate content than grain flours, such as rice and oatmeal, but have a higher healthy fat content. I used Brazil nut flour and coconut flour. Coconut flour is one of my favorite flours for cooking, it has a natural sweet touch that often doesn’t need to add ingredients to sweeten. You can replace the Brazil nut flour with almond flour, it tastes the same! Another secret of this recipe is bananas, prefer to use them very ripe to get to the ideal sweet spot.

Stuff
- 4 very ripe bananas
- 4 whole eggs
- ½ cup + 2 tablespoons. of coconut flour
- ¼ cup + 2 tablespoons almond flour
- 4 tablespoons of coconut oil or butter (if possible organic)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla essence
- 1 spoon of cinnamon powder
- A pinch of ground nutmeg
- A pinch of sea salt
Directions
- Preheat the oven to 180 degrees.
- Grease the mold with a thin layer of coconut oil or butter
- Mix all the wet ingredients (vanilla, eggs, coconut oil/butter, banana) in a bowl and blend with a mixer or use a blender.
- Mix all the dry ingredients in a large bowl (coconut flour, almond flour, bicarbonate and baking powder, salt and cinnamon).
- Pour all the wet ingredients with the dry ingredients.
- Mix well with a spoon until the dough is homogeneous.
- Pour the dough into its lightly greased shape.
- Bake on for 35-50 minutes (my oven took 45 minutes, worth checking after about 30 minutes.
- Waiting for it to cool and serve (sometimes I can’t wait…)
- You can serve it with fruit jelly, chestnut butter or as you prefer!
Extras:
less fat? If you want to reduce the amount of fat, use only 2 whole eggs + 3 egg whites. Or use 2 tbsp of oil or butter.

Nutritional data: This recipe earned me 10 slices. Each slice has an average of 190 calories, with 11g of fats, 16g of carbohydrates (being 4g fibers, 6g sugar) and 6g of protein.

I Simply Love this Recipe, Actually All Recipes That Involves Bananas End Up Really Tasty In My Opinion. Besides the Amazing Taste, it fits in almost all kinds of publics or even people with food restrictions. I can also say that is a gluten-free, dairy-free, and paleo friendly. and of course that i can’t lose the chance to say that i don’t believe in any type of trendy diets, since that would be totally again what i believe as a nutritionist and What ive learned so far, specially because people are so unique and different one from each other, with different lifestyles, organisms and metabolism.
Getting back to the bread, i’ve made this recipe with flours that have naturally high nutrition density, with fewer backs of carbohydrates when compared with flours from grains (i.e. Rice or Oats), but with higher amount of friendly fats. I used brazil-nuts flour and coconut flour, which is one of my favorites Flour to cook due the sweetly sweet taste that some times does not require extra sweeters. You can play around and change the type of flours, I have tried Almond Flour instead of Brazil-Nut Flour, and Worked Really Well!

- 4 bananas, fairly ripe
- 4 whole eggs
- ½ cup + 2 tablespoons. of Coconut Flour
- ¼ Cup + 2 Tablespoons of Almond Flour
- 4 Tablespoons of Coconut Oil (Or Butter – Rather Grass-Fed), Melted
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 1 Teaspoon Vanilla Extract
- 1 Tablespoon of Ground Cinnamon
- Pinch of Freshly Ground Nutmeg
- Pinch of Sea Salt
instructions
- Preheat the Oven to 350 Degrees.
- Grease (With Coconut Oil/Butter) a Bread Loaf Pan
- In a mixer, pour all the wet ingredients (vanilla, eggs, coconut oil/butter, bananas)
- In A Large Bowl Combine All Dry Ingredients (Coconut Flour, Almond Flour, Baking Soda and Powder, Salt, Cinnamon).
- pour the wet blended ingredients into the large bowl with the dry ingredients.
- with a Wooden Spoon Combine all the ingredients until it becomes homogeneous.
- pour the donut into your lightly greased pan.
- bake at 350 for 35-45 minutes, however start checking after 30 minutes.
- Enjoy!

less fat? instead of 4 whole eggs, add 2 whole eggs and 3 egg whites. or just use 2tbs of Coconut Oil// Butter.
