I love testing new recipes, I consider it an act of taking care of myself and whoever is around. Cooking brings freedom of flavor, pleasure and health at the same time. Like anything in life, the more you practice, the better and easier it gets. Making bread is something that I love for the simple fact that, in addition to loving a roll, they can serve in various situations and can be something absolutely nutritious. It all depends on the ingredients, of course.

This recipe is rich in fats and proteins, low in carbohydrates and has a very tasty flavor! I used sunflower seed paste, which sells in most markets close to where I live (southern California), but you can also make it at home (recipe below). For those who live in Brazil, it is worth looking in natural products houses, I have already found them in stores in the green world.

Unlike all my other bread recipes, this is the only one that goes with animal protein (eggs). It is gluten-free, dairy-free, so it can be used for those who are allergic or intolerant of these ingredients and suffer when having a delicious option for breakfast, for example.

I always encourage people to cook more at home, especially when it is a food that is present daily in the routine. Making your own bread seems like something that requires a lot of agility in the kitchen, or a habit of someone who has a free schedule, but I make my bread every week, even though I have a super busy schedule and nothing more than an adventurer in the kitchen. That is, why not try?

Having a good blender or a blender, you won’t spend more than 20 minutes on this recipe. Of course there is the bread baking part, which usually goes into the preparation time, but as I always am doing more than one thing at the same time, while the bread is in the oven, I’m usually speeding up something else (I always put a timer, if not, great chances of my bread toasting, I advise do the same).

Recipe

INGREDIENTES:

  • 3/4 cup. of sunflower seed paste (almond paste or peanut butter also work)
  • 6 eggs.
  • 2 tablespoons of honey or maple syrup.
  • 1/4 cup. coconut oil.
  • 1/2 tsp apple cider vinegar.
  • 1/4 cup. of crushed flaxseed.
  • 3 tablespoons of coconut flour.
  • 1 teaspoon of baking powder.
  • 1 teaspoon of baking soda.

Directions

  1. Mix dry ingredients in a bowl and mix well. and
  2. In a blender, mix the wet ingredients and beat until smooth..
  3. Combine both pasta and mix well!
  4. Place in a bread pan and then in a preheated oven at 350 f/180c.
  5. Cut into thin slices only after the bread has cooled and freeze to last longer!

Extras:

Freeze your bread! Any bread recipe that does not contain preservatives or any other chemical additive will not last long if not frozen. So, follow Step 5 right and take your frozen slices to the toaster before eating!

sunflower seed paste: On a parchment paper, place 800g of sunflower seed and bake in the medium oven for 15 minutes. In a processor with the seeds still warm, beat the seeds until it becomes a paste. You may need to add coconut oil or olive oil with a lighter flavor (2-4 tablespoons), but depending on your processor it will not be necessary.

Replacing sunflower seed: I made it with almond paste and it was super yummy. Peanut butter will probably work!
