Almond & Chia Seeds Waffles

Sunday is always a day to make something special for breakfast here at home. Week was rushed, a lot of plans in the head, a lot of work going on, and it’s always good to squeeze the pause and relax. Even more so if the pause comes with waffles!!

Since I bought this waffle making machine, I’ve been obsessed. But I’ll confess that I tested several recipes and none looked like those restaurant waffles! Many were withered, others took a while to cook inside, but this one… right shot! These waffles are gluten free, dairy free, grain free, but with a lot of flavor!

dsc_0703It’s important not to replace any flour with another in this recipe, it’s no use asking me if you can change the almond flour for flour from whatever, it follows to the letter so there is no mistake! Don’t get me wrong, I have a problem following recipes, I’m a champion in changing ingredients. But if you want that very crispy waffle, come on mine!

These waffles are poor in carbohydrates and super rich in good fats and proteins. I used half of a scoop of protein powder (I love Vega brand), but know that it’s super optional to include it in the recipe.

extra tips

You can also freeze the waffles after they are ready and put them in the toaster when you want to eat! It gets super crispy and can even save you a little while during the week. I used coconut nectar to serve, but you can use honey, maple syrup, fruit jam, or whatever you want!

Let’s get down to business…

Recipe

Render: 6 to 8 waffles.

  • 3/4 cup. of almond flour
  • 1 col. of coconut flour soup
  • 1/2 chocolate protein scoop (Vega Sports) – optional
  • 1/2 col. of yeast powder tea
  • 1/3 cup. of peanut butter (or any other chestnut paste)
  • 3 col. of coconut oil soup
  • 2 organic eggs
  • 2 col. of chia seed soup
  • 3/4 cup of almond milk (or any milk of your choice)
  • 1 tsp vanilla extract

To serve:

  • Fresh fruits (I used blueberry, but you can use any fruit or fruit jam)

Directions

  1. In a medium bowl mix wet ingredients (eggs, peanut butter, vanilla, coconut oil) and mix well.
  2. In another bowl mix the dry ingredients.
  3. Turn on the waffle machine.
  4. Add the two mixtures and mix well until it forms a very uniform dough. Let the dough rest for a few minutes.
  5. Put 3 tablespoons of the dough (or more if you want larger waffles).
  6. Serve with fruit, almond paste and a healthy syrup option (honey, maple syrup, coconut nectar, etc).

paleo waffles

This waffles came in such a good time! Since I Bought My Waffle Maker Ive Become Obsessed About Waffles! but I am not going to lie, I had had a few failures while trying waffles recipes, some would be too soggy or even flavorless.

for me waffles should be crispy outside and a little bit fluffy inside, so that is always my goal while making waffles. To my surprise, this almond & chia seeds waffles came out exactly how I was expecting to, thats why I am sharing this recipe with such an excitement.

These beauties are gluten free, dairy free, paleo friendly, with a lot of friendly fats and proteins! They are also low in carbs, so I allowed myself to add a healthy syrup, like Coconut Nectar as a liquid sweeter option. but feel free to add any other liquid sweeter that you like. My Other Favorites: Maple Syrup, Raw Honey or Even A Unsweetened Fruit Jam.

I have also frozen a few waffles for my week, which makes a convenient and healthy breakfast for my week!

6-8 waffles

ingredients

  • 3/4 Cup Almond Flour
  • 1 tbsp Coconut Flour
  • 1/2 scoop of protein powder (totally optional)
  • 1/2 tsp baking powder
  • 1/2 Cup of Almond or Peanut Butter (unsalted & unsweetened)
  • 3 TBSP Coconut Oil
  • 2 Organic Eggs
  • 2 tbsp of chia seeds
  • 3/4 Cup Almond Milk (Or any other you prefer)
  • Vanilla Extract to Taste

to serve:

  • Fresh Berries and/or your favorite nut butter

instructions:

  1. Combine all the wet ingredients and using a spatula Stir well.
  2. In a different bowl combine all the dry ingredients.
  3. Turn on your waffle machine to medium high temperature.
  4. Pour the wet mixture into the dry ingredients and mix until you have a homogeneous daughter.
  5. pour 3 to 4 tbsp of the dough into the waffle maker and wait until is ready!
  6. Serves with your favorite syrup, fresh fruits, and whatever else you feel like having!

  • You can always make extra waffles and freeze them for later!!
  • Variations: Chocolate Flavor: Add 1 Tbsp of Cocoa Powder + 1 TBSP of Cocoa Nibs!
