Ever since I felt the benefits of fermented foods in my health and well-being, I include daily a portion of these probiotic-rich foods in my diet. These microorganisms can help us in different ways, mainly by balancing the bacteria of our intestinal flora (here I made a complete post about fermented foods and their benefits). With this balance, our absorption of nutrients is much more effective, our immunity is favored, as well as the functioning of glands and organs in our body.
Yogurt is part of the eating habits of many people, as well as a practical and quick option for breakfast or for a snack throughout the day. In addition to being super versatile, it can be used in smoothies, mixed with fruits and/or jellies, nuts, seeds..etc!
Remember that real yogurt is made only of milk and dairy yeast, nothing more. The original flavor is sour, not sweet. What we usually see out there are yogurts full of sugars, artificial sweeteners, dyes and thickeners, so always read the list of ingredients and remember: less is more. This version of yogurt I made was from the coconut cream that often in Brazil is difficult to find pure. I indicated the brands I used from here in the USA, but for those who live in Brazil I suggest testing with coconut milk and suddenly include more chia to thicken.

Step by step to make your yogurt
Those who are not used to fermented foods can be a little apprehensive and afraid of the idea of producing their own food, but I guarantee you that there is no secret (ok, few that I will share with you)!
Probiotics are sensitive microorganisms and to cultivate them we need to pay attention to some details. Cleaning the bottles and spatulas is the first step to avoid contamination. Another important detail is to avoid the use of metal materials, because the probiotics are acidic in nature and when they come into contact with a reactive metal, they will react promptly. So the best options are glass bottles, wooden, plastic, silicone or stainless steel (inert metal) trowels.
Regarding the time required for fermentation, we have heat as one of the most important variables, and it will dictate the speed of the process. The bottles should be stored at room temperature and protected from direct sunlight. On average it takes 24 to 48 hours for the fermentation process to take place, I do not recommend leaving it for a long time beyond 48 hours, to avoid fungal contamination. Another variable that interferes with time is the way you prefer to consume yogurt, a more liquid texture requires less time and, on the other hand, those who prefer the more consistent texture should wait a little longer (up to 48 hours) .

- well sanitized glass pot and preferably with the narrow mouth,
- A wooden spoon or silicone spatula
- cotton cloth (cheesecloth) and the probiotics in capsules that I suggest this or this
Recipe
Ingredientes:
- 400 ml of coconut cream (more dense than coconut milk, contains the \”meat\” of the coconut as the first ingredient and water as a second)
- 2 capsules of probiotics or probiotic powders (use) that or that)
- 2 tablespoons of chia seed
Utensils:
- Glass jar
- cotton cloth (cheesecloth)
- Wooden spoon or silicone spatula
- Elastic or string to tie the cloth
Preparation:
- Mix the coconut milk and pour it into a glass bottle
- Mix the chia with the coconut milk
- Open the probiotic capsules and mix with the coconut milk with the help of a spoon.
- Cover the glass with the cotton cloth (if you want that denser consistency, apply two layers of cloth).
- With the help of a string or elastic, attach the cloth
- Let it rest for 24 to 48 hours at room temperature (the warmer the environment, the faster the fermentation process)
- Store in the refrigerator until consumption.
Fermented Coconut Yogurt
this is a super easy recipe and a good way to start consuming Fermented Food! Since I started consuming probiotics ive reported an improvement on my overall health and well-being. Fermented food will introduce beneficial bacteria into our digestive system and help to balance \”the good and the bad\” bacteria in our system. Having the Proper Balance of Gut Bacteria will help to absorb more of the nutrients in the foods, leading to an increase of antibodies and a Stronger immune system.
There are no Fancy Tricks or Expensive Equipment Involved here, this requires just 2 to 3 simple ingredients and can easily and quickly be made by anyone. Yogurts are always a good option for breakfast or a satisfying snack! I like to add fresh fruits, granola and seeds into my yogurt, increasing the amount of proteins and fibers.

ingredients:
- 1 can of coconut milk
- 2 probiotic capsules (I recommend this or this one)
- 2 tablespoons of chia seeds
utensils:
- 1 jar glass
- cheesecloth
- Wooden Spoon or Silicone Spatula (dont use a metal spoon, it can react negatively with the probiotics)
- rubber band
instructions:
- Shake Your Coconut Milk Well, Open It and pour into a Clean, Dry Glass Jar.
- add the chia seeds and empty your probiotic capsules into the yogurt.
- Stir until creamy and smooth, pushing the probiotic up again the side with your spoon to evenly spread.
- Cover the mixture with cheesecloth and secure with a rubber band.
- Let the yogurt activate for at least 24 hours and up to 48 hours in room temperature.
- Once the yogurt has recovered the right amount of thickness for your liking, cover securely with a lid and refrigerate.
