Few things bring as much comfort as a hot roll, especially when it is home made and full of quality ingredients! I always have a few options in my freezer and I find it very practical to just warm them up before consuming. It is these small details that help us to follow the plan in a more peaceful way and especially, with pleasure.
Tips on how to use: Make a variety of sandwiches, such as: humus, cashew nut cheese, smoked salmon, avocado mashed with lemon and sea salt, tempeh, microgreens…Finally! The possibilities are endless!
Recipe
Ingredientes:
- 150g (1 1/2 unit) Cooked Sweet Potatoes – I use the peel (rich in fiber and nutrients), but I suggest opting for organic.
- 3 1/2 tablespoons of coconut oil
- 4 organic eggs
- 2 cups of almond flour
- 1/2 cup of water
- 1 teaspoon cinnamon powder
- 1/2 teaspoon of nutmeg
- 1 teaspoon of sea salt
- 1 tablespoon of yeast
Preparation:
- Place all ingredients in a blender and blend until smooth. (If you prefer you can do everything by hand or just blend the liquid part/oils).
- line one form small bread with parchment paper
- Bake in the oven for 60 minutes at 180°C or 350°F.
how to conserve: This bread will last about 03 days out of the fridge, 07 days in the fridge and up to 1 month inside your freezer. Remember to slice it before freezing!
Substitutions: Almond flour can be replaced easily with other oilseed flours. I didn’t try with other flours, so I don’t guarantee the same result. If you choose oatmeal or grains, adjust the amount of water or coconut oil, as they absorb a greater amount of water.
