Crispy Coconut and Ginger Cookies

Cookies, cookies and more cookies, please! I’ve always been arrived at a sweetie, anyone who knows me knows well. more than admitted. But, I try to continue nourishing my body without ceasing to satisfy my pleasure at the same time. How happy I am when I try to make a sweet recipe, with quality ingredients and the result is better than expectations!! This recipe was like this! I remember once I made it at one of my best friends here, who is even my great partner to test recipes in the kitchen, and her 10-year-old daughter loved the cookie. For me it was the main test, because the child \”knows well\” how to judge a cookie.

recipe:

Stuff

  • 1 cup oatmeal (if you prefer, opt for gluten-free oats)
  • ½ cup grated coconut, sugar free
  • 5 tablespoons of coconut oil, melted
  • 3 tablespoons of maple syrup or honey
  • 3 tablespoons of mineral water
  • 3 tablespoons almond milk or cashews milk (learn how to make it at home here)
  • 2 tablespoons brown rice flour or cashew nut flour
  • 1 tablespoon coconut sugar (what I use) or demerara
  • 1 tablespoon Psyllium Husk (see where to find in extras)
  • 2 teaspoons of powdered ginger
  • 1 teaspoon vanilla essence (prefer base in water)
  • ½ teaspoon cinnamon powder
  • 1 pinch of salt marine

Directions

  1. Preheat the oven to  180 degrees C
  2. In a large bowl, mix the dry ingredients: oat flakes, psyllium peel, coconut sugar, grated coconut without sugar, sea salt and spices. Mix well.
  3. In a small bowl, mix all the wet ingredients: coconut oil, almond milk, water, maple syrup or honey and the vanilla extract.
  4. Pour the wet mixture into the large bowl with dry ingredients and mix until you get a homogeneous mass.
  5. On a lined baking sheet or with parchment paper, separate about 1-2 tablespoons of the cookie dough flattening by hand or with the back of the spoon.  (about 2 centimeters in diameter).
  6. Bake for 15-20 minutes, keep an eye out for about 12 minutes or until the edges become darker, taking care not to let the edges burn.
  7. Cookies will become crunchier as they will get cold.
  8. Let cool for at least 20 minutes.
  9. Ready!

These cookies are a good snack option to make for the kids, or to consume between their meals with a good mug of almond milk! A simple and delicious recipe to make. If you also love a cookie, you probably won’t be disappointed. This recipe comes with a coconut flavor and a touch of ginger that makes all the difference! It is gluten-free, rich in fiber, vegan and delicious!

Extras:

  • How I like to eat cookies:  I like to mix it with a scoop of fruit ice cream (in a mixer, beat 1 cup of frozen fruit with 1 tablespoon of almond milk or yogurt. That’s it!). You can adapt the recipe and include dark chocolate or carob chocolate (if you have a cocoa allergy) before putting cookies to bake.
  • Where to find the ingredients? Natural products stores or online stores, cereal zone. see mine Guide to finding healthy ingredients. 
  • store in a well-sealed container to maintain the crunch. However, I recommend consuming these very fresh cookies, as soon as they start to cool down and gain crunchiness.
  • Conventional Cookies that we see around in supermarkets are usually full of refined sugar and refined flours (both white, full of nutrient-poor carbohydrates and with the ability to increase blood sugar quickly and without satisfaction after consumption). Some still contain hydrogenated vegetable fat, also known as trans fats, IIncluded in several industrialized foods . studies They relate the intake of trans fat with dyslipidemias (dequilibrium of cholesterol fractions and elevation of triglycerides in the blood) and insulin resistance, therefore, one more reason to risk a homemade recipe with quality ingredients!

Cookies, Cookies, and More Cookies, Please! im not going to lie, i have a hug sweet tooth, since Im a kid. but I try to keep my body nourished and have the pleasure of eating sweet treats at the same time. This is one of my favorite recipes, and if you are a cookie lover as well, probably it will not disappoint you! This recipe is gluten free, vegan, high in fibers, and friendly fates.

Recipe:

ingredients

  •       1 cup gluten free rolled oats
  •       ½ cup shredded coconut, unsweetened
  •       5 Tablespoons Organic Coconut Oil, Melted
  •       3 Tablespoons Maple Syrup
  •       3 tablespoons filtered water
  •       3 tablespoons almond or cashew milk
  •       2 tablespoons Cashew Flower or Brown Rice Flower
  •       1 Tablespoon Coconut Sugar
  •       1 Tablespoon Organic Psyllium Husk
  •       2 Teaspoons Ground Ginger
  •       1 Teaspoon Vanilla Extract
  •       ½ teaspoon of cinnamon
  •       dash of sea salt

 

instructions

  1.    Preheat the Oven to 350 Degrees f.
  2.     Combine Dry Ingredients in a Large Bowl: Rolled Oats, Psyllium Husk, Coconut Sugar, Coconut, Salt, and Spices, and Stir to Mix.
  3.    In A Different Bowl, Combine All Wet Ingredients: Organic Coconut Oil, Almond Milk, Water, Maple Syrup or Honey, and Vanilla Extract.
  4.    Mix Both Dough (Dry and Wet), then Stir until you get a homogeneous Dough.
  5.     each cookie will be about 1-2 tablespoons of the dough. Scoop this portion and pour in a baking sheet flattening with your hands or with the back of a spoon.
  6.    bake for 15-20 minutes keeping an eye on them after 12 minutes, paying attention to the edges, you dont want them to get burned.
  7.     Let It Cool So The Cookies Will Get Crispier (15-20 minutes)
  8.    Store in glass or jar container, make sure will be very sealed to maintain the nutrition value and the crispy consistency.
  9.    Enjoy!

Extras:

  • The Conventional Cookies That We See Around The Grocery Stores, Might Not Contain the Best Ingredients, They Are Usually Rich In Refined Wheat Flour, Refined Sugar, And Hydrogenated Fat (also known as trans fat). So, thats another reason to try this amazing recipe, since homemade stuff are usually the best thing for you!
  • How I Eat These Beauties: depending on my inspiration, sometimes i enjoy these cookies with banana ice cream (shortly i will post the recipe) // I also love to eat it with a hot or cold glass Milk with Cinnamon.
  • you can add some dark chocolate or carob drops (in case you and cocoa dont go along) into the cookies (before baking it)
