Sweet as dates…
Recipe
Brownie layer:
- 1 cup of cashew nuts
- ¼ cup raw almonds
- ½ cup cocoa em powder
- 1 cup of tamares madjool without pits (softer than other dates)
Chocolate cookie layer:
- ½ cup raw almonds
- 1 cup of cashew nuts
- ¾ cup of dates without snails madjol
- 1 dessert spoon of coconut oil
- ½ cup of dark chocolate drops
- In a food processor, pulsate the cashews and almonds until it is well crushed (I like to leave a few pieces).
- Add the cocoa and pulsate until well mixed.
- Add the first cup of dates no processor and pulse for a few minutes, until the dough forms (Note: If you notice that the dough is not sticking, add more dates)
- Using a spoon and your hands, add the brownie layer in a square 20x20x5 cm or 8x8in shape (or similar size). Squeeze well with your hands to spread well and leave the dough well pressed and compact.
- Leave a layer of brownie de side start to make the cookie layer that will go over the brownie.
Cookie Layer:
- In the processor, pulse the almonds until are well ground and add the cashews.
- Add the dates by a few and finally the coconut oil (always pulsing to mix the ingredients well.
- Add the chocolate chips & pulse fast for 1-2 times maximum.
- Using your hands and a spoon, press the cookie layer over the brownie layer.
- Put it in the freezer for 30 minutes and that’s it!
- You can keep it in your fridge for an average of 1 week or in the freezer for 1 month.
Imagine the no-baking bar with the first layer of brownie and the second layer of cookies. YAS!! but as oposed to the conventional brownies and cookies, this recipe has only high quality ingredients and can be part of your daily routine, if desired.
These bars don’t have the same texture as cooked brownies obviously (specially because they are suposed to be eaten raw), but they are incredible tasty and super decent!
The perfect combination between carbohydrates and friendly fate is a hunter killer combo! I love these raw brownie cookies bars if I am craving something sweet after dinner or for a quick snack!

This recipe requires a food processor, a bakind dish (8x8in) and the following ingredients. It may least for 1 week inside your bridge or up to one month inside your freezer. You can cut it in small pieces and enjoy it with a coffee or for anytime you want!

Brownie Layer:
- 1 Cup of Raw Cashews (Or Walnuts)
- ¼ Cup of Raw Almonds
- ½ cup of high quality cocoa powder
- 1 cup of madjool dates
Cookie Layer:
- ½ cup of raw almonds
- 11 cup of raw cashews
- ¾ cup of madjool dates
- 1 tbsp. coconut oil
- ½ cup of chocolate chips
- in a Food processor, pulse the raw cashews and almonds until they are finely grounded.
- add cacao and keep pulsing until very well combined.
- add the 1st cup of dates into the processor and pulse for a couple minutes, making sure the daughter is well combined. If necessary, add more dates.
- Removes from your food processor and add the brownie layer to your baking dish (8×8 or similar). With your hands, keep pressing the dough until you create a similar layer. The More Tight You Pressure, The Better.
- Leave brownie layer to the side and go back to your food processor to continue with the cookie layer….
Cookie Layer…
- Pulse the raw cashews and almonds until they are finely grounded.
- add the ¾ cup dates & Coconut Oil and Pulse Until the Dough is Formed.
- Add Chocolate Chips and Quickly Pulse 1-2 Times Max.
- using your hands press the cookie layer on top of the brownie layer.
- Place in freezer for 30 minutes.
- Ready to enjoy!
