english version? Click here! Sweet potato is something that can’t be missed in my pantry, anything I do with it tastes good. Super versatile, it fits both savory dishes and the main ingredient in desserts. These truffles are naturally gluten-free, dairy-free and are made with super rich ingredients, such as almonds, dates, oats and sweet potatoes (of course).

Sweet potato is a fiber rich in fiber, with a smooth digestion for most people and promotes a stable glucose level in their blood after being ingested. The bright orange color shows the high level of antioxidants it carries (mainly beta carotene) which, as I explained about the carrots, When cooked, it has increased bioavailability of antioxidants. That is, opposite to what we always think, instead of reducing the bioavailability of nutrients, the sweet potato when heated can even bring you more antioxidants!

In addition to being rich in vitamin A (essential for skin and vision), sweet potato is also an excellent source of vitamin B6 (essential for the action of various enzymes in our body, nervous system and can still help in that feeling of relaxation) and vitamin C (powerful antioxidant and strengthens our immune system). In other words, by tasting these truffles, in addition to doing good for the soul, we are offering very rich nutrients to our body, which will collaborate with that feeling of well-being.

INGREDIENTES:

  • 2 1/2  sweet potato cups (2 averages)
  • 1 cup raw almonds
  • 1 cup pitted dates
  • ¾ cup oat flakes (gluten free)
  • 1 tablespoon organic coconut oil
  • 1 teaspoon cinnamon powder
  • 1 teaspoon vanilla essence (prefer water base)
  • Pinch of sea salt

  • CHIA SEEDS
  • cocoa nibs
  • dry cranberry (you can use raisin or goji berry)
  • Grated coconut
  • Cocoa powder with cinnamon

Instructions:

  1. Wash the potatoes under running water.
  2. Cook the sweet potatoes 180 degrees for 30-40 minutes, continuously checking whether it is soft/cooked with a fork or toothpick. Natural sugars start to caramelize and you already know that you are close to being ready.
  3. Allow the potatoes to cool at room temperature.
  4. Then add all the ingredients in a high-speed blender (look at the options in Kitchen Tools – Kitchen Accessories)
  5. Divide the mixture into 6 large balls or you can make 20 smaller balls (important to let the dough cool a little to make it easier to roll – I suggest leaving it in the freezer for about 20 minutes or more). 
  6. Roll each part divided into a ball in the palm of your hands (if you feel it is necessary, put some coconut oil in your hands.. 
  7. Leave it in the freezer for about 40 minutes and the truffles will be ready to be devoured!

Wrap each truffle, one at a time, in any ornament you want (goji berries, raisins, sesame seeds, pumpkin seeds, sunflower seeds, cocoa powder, grated coconut, etc).

Extras:

Where to store: I usually leave these truffles inside a glass container in my freezer and they are always good to eat. You can take it out of the freezer and eat it right away!

When rolling: With warm hands, it sometimes makes it difficult to curl the truffles. If this happens to you, try holding some ice pebbles while you do it. This happened to a friend and it solved the problem!

  •        2 1/2 Cups Sweet Potato Purée (2 Mediums)
  •       1 Cup Raw Almonds
  •       1 cup dates, pitted
  •       ¾ Cup Gluten Free Rolled Oats (Or Coconut Flour)
  •       1 Tablespoon Organic Coconut Oil
  •       1 Teaspoon Ground Cinnamon
  •       1 Teaspoon Vanilla Extract
  •       Pinch of Sea Salt

  • goji berries

  • Shreded Coconut 

instructions

  1.  Sweet Potato Purée: Bake Sweet Potatoes at 350 Degrees F for 30-40 minutes (until you feel they are soft inside).
  2. wait the potatoes to cool down and puor into a food processor or blender, with all the remaining ingredients until you get a mix similar to a daughter.
  3.  Scoop out 20 balls and roll with your hands into balls. then roll it on the \”Fancify Ingredients\”.
  4.  The More You Let the Dough Cool Down, The Easy Will Be To Roll Them Up. 
  5. chill in the freezer for about 40 minutes. 
  6. enjoy!!
