Like most soups that have quality ingredients, such as vegetables, vegetables and herbs, this soup can guarantee you a good opportunity to detoxify your body, offer numerous nutrients and even a more than special flavor. If you try this recipe and I tell you that to make it you don’t need more than 5 ingredients, you probably won’t believe it! That’s what I like most about this soup, it’s basically broccoli and water, in addition to some spices, and the flavor is sensational! The secret of this soup is to include the water used to boil the broccoli, instead of dispensing it. It makes all the difference in flavor.
This recipe is from chef Gordon Ramsey and obviously I preferred the version he suggests with goat cheese, but if you don’t like it, you can make it without, it’s still delicious! I’m kind of obsessed with goat cheese, when I see a recipe I use, I’m already sure it will be the style I like.
Milk or goat’s cheese, has a lower lactose (milk sugar) content than cows, in addition to lower fat globules, which makes it easier to digest for most people. But, regardless of digestion and science, this goat cheese (I used chévre) guarantees a special touch to the soup, so I highly recommend including it!
This soup is ideal to remind people that we can create wonderful recipes, from simple ingredients and without much sophistication. Soups are ideal for combining ingredients rich in nutrients, such as vegetables and vegetables, in a way that it is possible to ingest a lot of amounts, at once.
Recipe
Ingredientes:
- 1 or 2 stalks of fresh broccoli (preferably organic)
- Water
- 3 tsp fine sea salt
- Black pepper to taste (about three turns on the grinder)
To serve:
- extra virgin olive oil
- Goat cheese (1 thick slice or 1 tablespoon full soup)
- Nuts (optional)
Instructions:
- Boil water in a pot.
- Include the already chopped broccoli and salt, let it boil until, when poking the broccoli with a fork or knife, it is soft (but be careful not to overcook)
- With a sieve or a hollow shell, gradually remove the broccoli from the pan and you can transfer it to your blender. Do not dispense with the water you used to boil the broccoli (you will need it next).
- When you have already transferred all the broccoli, you can add the water to half of your blender. You can include a few more pinches of salt here and the black pepper.
- Press PULSE three times. Start with your blender at a lower speed and you can beat until you reach that pureed consistency.
- Include the cheese on top and the walnuts to serve.
- Ready!
Extras:
Cooking broccoli: You don’t want the broccoli too cooked and soft. This helps to maintain the bioavailability of nutrients.
Accompaniment ideas: I like to drink this starter soup, with a slice of whole homemade bread (mainly with my nuts & seeds bread). If it’s my main course, I make a point of including 2 more tablespoons of sunflower seed or hemp seeds and accompanying it with 1 slice of wholemeal bread and 1 scrambled egg.

if I tell you that soup only has 5 ingredients, you probably wont believe it. I am telling you that, because when I first tried this soup with my friend, I was so sure that we were about to have an ok soup. But, as Opposing Of What I Was Expecting, This Recipe was surprisingly delicious!

- 1 large Fresh Broccoli Cluster (preferably organic)
- water

instructions:
- Boil water in a pot.
- add the broccoli and salt and let boil until the broccoli turns a little softer (but be careful, you don’t want to overcook the broccoli)
- With slotted Spoon, removes the entire broccoli from the pot and add it to a blender. Do not pour the water out (you will need then for it) and be careful, because of the broccoli will be super hot.
- Put the water that from the cooking broccoli up to half of your Blender. You can add a pinch of sea salt here.
- Press Pulse Press 3 or 4 times. start with your blender at a lower speed and speed it up until you get puree consistency.
- pour the soup in a bowl and add the goat cheese on the top to serve. You can add the walnuts here if you want to.
- Ready!!
