10 minute, vegan granola bars

First of all, happy 2016! The year started so busy that I only managed to set aside time for the blog today! Sunday, cloudy weather outside, without the slightest desire to leave the house! I love it: having time to stay in your pajamas, do anything or do anything. I always say that having time is one of the most precious things nowadays, so free time is time to do whatever you want! I like to do those little things that stay on my head, like watching that movie X, or testing that Y recipe, or hanging that picture that has been leaning against for a few weeks, taking a bath of salts, and so on….

Today I woke up and saw a beautiful picture on the food52, which always has fantastic recipes and I was already excited to make these bars. I usually buy ready-made bars, but I’m super boring to choose, because most of them are full of strange ingredients that I prefer to choose a hand of chestnuts when it’s to be something practical. I always say, when buying a bar, look for something with as little ingredients as possible or those ingredients that we can pronounce. If you can see and recognize the ingredients, even better!

Now, if you also enjoy doing things \”From Scratch\” or have 10 to 15 minutes for nothing at home, you can get your hands dirty, because these bars are super easy to make and very tasty! And best of all: you can change the seeds, type of dried fruit, type of almond paste and do it the way you want!

Stuff

  • 2 cups of oatmeal (without gluten if you prefer)
  • 1 cup pumpkin or sunflower seeds
  • 1/2 cup dried or cranberry
  • 2 tablespoons of hemp seeds, or flaxseed or chia seeds
  • 2/3 cup of almond or peanut paste (see how to make it at home here)
  • 1/2 to 2/3 cup of honey (preferably organic and raw)
  • 1/8 teaspoon of sea salt

Directions

  1. In a bowl mix oats, seeds and dried fruit.
  2. In another bowl, mix the honey, almond paste and sea salt well.
  3. Mix the two bowls well in a larger container (be patient because at first it looks like it will be super dry. If you need it, adjust it with more honey or almond paste, but first mix it well).
  4. Place in a square shape with parchment paper and press with your hand to align the dough and make it very firm. I like to line it with parchment paper because then it’s easy to take out of the mold.
  5. Place in the freezer for 20 to 30 minutes.
  6. Remove from the freezer and cut into pieces the size of conventional bars. Store in the fridge for up to 10 days!

Extra

ideas: Good option for before any physical activity, as they are a good source of energy and carbohydrates. They can also kill that craving for sweetness or hunger among their main meals.

Serves: 10 bars

ingredients

  • 2 cups of gluten free oats
  • 1 cup of raw pumpkin seeds
  • 1/2 Cup of Raisins
  • 2 TBSP. hemp seeds
  • 2/3 Cup of Almond Butter or Peanut Butter
  • 1/2 to 2/3 Cup of Honey (Preferable Organic and Raw)
  • 1/8 tsp of sea salt

instructions:

  1. In a bowl mix oats, seeds and dried fruit.
  2. In Another Bowl, Whisk Together Honey, Almond Butter, and Sea Salt.
  3. in a large bowl, combine both mixtures and with wooden spoon,  stir it well until well combined (Be patient because first looks like it Will be super dry. if you need, adjust with additional honey or almond butter).
  4. Place mixture in a square shape baking dish and press it using your hands. use parchment paper underneath  the dough and leave it firmly.
  5. Place in the freezer for 20-30 minutes.
  6. Removes from Freezer and Cut into Pieces Like the Size of Conventional Bars. Store in the Refrigerator for up to 10 days!
