Coconut Cashew Matcha Bites (Low Sugar, Grain Free)

I have received requests for recipes that are practical, nutritious and tasty at the same time. So, this recipe meets the requests! Only a few ingredients with a lot of nutritional density, fiber, good fats and vegetable proteins. I loved this recipe because just a little ball already satiates hunger very much!

I’m in love with coconut and all the ways we find it: coconut oil, coconut butter, crispy chips, grated coconut and etc. If you still haven’t familiarized yourself with the use of coconut oil, for example, I highly recommend it. Coconut oil is one of my favorites and I use the most, mainly because of the taste and nutritional value it has. Composed of an average of 90% of saturated fats, with 65% of these fatty acids composed of medium-chain triglycerides (TCM, or MCT in English).

Unlike long-chain fatty acids (most fats in our food) that require certain structural modifications to be absorbed, the TCM is easier to digest by our body. This is because the TCM is absorbed by passive diffusion in our gastrointestinal tract, and then sent to the liver, which can use it as a source of energy. For this reason, the use of TCM is very common in clinical practice for people suffer from malabsorption syndrome, in diets that need greater caloric intake in low volume and ketogenic diets.

This does not mean that the coconut and its derivatives should be the only source of fat in your diet. There are thousands of healthy fat sources available, with different functional properties. Therefore, we should not put any food as a miracle ingredient or consume it in excess. What matters is the variety and self-knowledge, since each organism will react and function in a different way.

We will also find a little matcha, cashew nuts and some spices to adjust to the flavor. For those who don’t know, matcha is an extremely antioxidant type of green tea, rich in amino acids and chlorophyll (which explains the vibrant green color). Due to its amino acid profile (mainly L-theanine) and the touch of caffeine, it can cause a relaxation and concentration effect, so it is widely used before the practice of meditation by monks in the Asia region.

I use matcha not only in teas, but also in lattes or in my matcha pancake! in Brazil it is still difficult to find, so the most recommended would be to look in oriental stores or buy online at ebay or here. The recipe without matcha also works, ok?

Recipe

Render: 10 to 12 balls

Ingredientes:

  • 1 cup of grated coconut without sugar
  • 1 cup of cashew nuts (I didn’t roast it before)
  • 4 col. coconut flour soup (or almond)
  •  1 tbsp of matcha powder (I like of this brand)
  • 2 to 4 tablespoons of coconut butter (you can use coconut oil) – adjust according to consistency
  • 1 teaspoon of Ceylon cinnamon
  • 1 teaspoon of alcohol-free vanilla extract.
  • 4 tbsp of neutral flavored collagen powder (optional)

Optional for sweetening/decorating

  • 10 drops of stevia (which I used), or 1 to 2 col. of coconut sugar soup, raw honey or maple syrup.
  • Chia seed and grated coconut

Instructions:

  1. Place all the ingredients in a food processor until it becomes a very homogeneous dough. You will have to take some breaks to scrape the sides of your processor so you don’t waste ingredients!
  2. mold the dough into balls
  3. Store in a glass jar inside your fridge or freezer.

Coconut Cashew Matcha Bites 

An amazing to-go snack option, filled with healthy fats, antioxidants, fiber, and more. It is paleo friendly, vegan (if not using honey as a sweeter), and it can be a very satisfying snack due to the high amount of fat and fiber.

ingredients:

  • 1 cup unsweetened shredded Coconut
  • 1 cup cashew nuts (raw & unsalted)
  • 4 Tablespoons Coconut Flour (Or Almond)
  • 1 tablespoons matcha powder
  • 2 to 4 tablespoons of Coconut Butter (You can also use Coconut Oil)
  • 1 Teaspoon of Cinnamon
  • 1 Teaspoon of Vanilla Extract (Alcohol Free)
  • 2 TBSP Unflavored Collagen Powder

Optional to Sweeten / Garnish

  • 10 Drops of Stevia (The One I Used), or 1 to 2 Tbsp of Coconut Sugar, Coconut Nectar, Raw Honey or Maple Syrup.
  • Chia seed and shredded coconut (garnish)

instructions:

  1. In a food processor, blend all the ingredients until a Thick, Moisture Dough. You may have to adjust the coconut butter/oil her.
  2. firmly press 1 tbsp of your green donut into small balls. If you wish, use your garnish options here.
  3. Store your bites in a Airtight Food Container in your Fridge or Freezer.
