This recipe is the way I like it: fast, practical, healthy and delicious! Unfortunately, most of the sweets we find out there are full of sugars and industrialized ingredients (dyes, stabilizers, chemical additives…etc.), which are usually responsible for triggering inflammatory processes and, often, allergic processes in our body. I recommend portioning the fudge in small pieces and leaving it in the freezer for the days when the ants are attacked or to accompany a coffee. I find it very practical and it helps me a lot to have healthy options within my reach. Did you notice that one of the ingredients I put on is Peruvian maca? Peruvian Maca is an adaptogenic root grown in Peru, often found in powder at health food stores. I love the slightly sweet taste and smell it has, in addition to the mineral profile that is very rich! - 2 tablespoons of Peruvian maca powder
- 2 cups of grated coconut
- 2 to 3 tablespoons of coconut nectar or honey or 10 to 15 drops of stevia (adjust according to taste)
- 1/4 cups melted coconut oil
Instructions:
- In a food processor, beat the grated coconut until it becomes a paste. Scrape the sides.
- Include the other ingredients and turn on the processor once more until the ingredients have reached a homogeneous and creamy texture.
- Place the mixture in an ice form or in a bread shape with parchment paper at the bottom.
- Take it to the freezer for at least 30 minutes.
- Cut into small pieces and store in the freezer for up to 30 days.
