These protein squares are super nutritious and full of good fats to ensure that good satiety! The protein combination comes from hemp seeds, almonds and pumpkin seeds, all are excellent sources of vegetable proteins. So, if you are a vegan or follow a diet predominantly of plant origin, this recipe can be a super powerful snack, believe me!

I love having delicious and healthy snack options at home. even if my appetite for candy is much lower since I made my last sugar reset, this time of year I feel much more inspired to cook and share these delights with my family and friends! I made these raw spirulina and lemon squares thinking about a snack or an option to accompany a coffee or tea, but between us, it’s a great option for any moment!

2017 was a wonderful year and it’s even difficult to describe how many things I’ve learned! But I would like to highlight my biggest personal challenge for 2018, which is to focus on living in the here and now, without being in a hurry to take the next step or stay in that anxiety of the future. Without a doubt it is a continuous work, but honestly, I realize that working this helped me a lot to keep calm during the chaos. Being more present and being patient with myself are my goals for 2018 and for life.

Recipe

Ingredientes:

  • 1/2 cup almonds or pistachios
  • 1/2 cup pumpkin seed 
  • 3/4 cup grated coconut
  • juice of 2 lemons (almost 1/4 cup)
  • 1/4 cup of hEMP Seeds
  • 1/4 cup coconut oil, melted
  • 1/2 tablespoon of sPolulina Powder
  • 1/2 cup chopped dates (70g)

Instructions:

  1. Place all the ingredients in a food processor and pulse until the bits begin to come together. Be careful not to process too much and turn a folder (you want to have mini pieces).
  2. Cover a baking sheet or glass refractory with parchment paper.
  3. With your hands press the mixture into the form.
  4. Place in the freezer or freezer for at least an hour.

*I like to leave them in the freezer, in addition to lasting longer, it is delicious when eating. Those who prefer the softer texture, just wait a few minutes before eating.

Not to mention the presence of Spirulina, a very powerful algae that I already wrote about all the unique benefits here. This recipe is also high in plant-based proteins from hemp seeds, almonds, and pumpkin seeds. So, if you happen to follow a vegan or a more plant-based lifestyle, this bites can be a super to-go snack. Trust me!

  1. in a food processor pulse all the ingredients until your mixture starts to come together. Be Careful to not overbled the mixture, it is supposed to be crumbly.
  2. line a square baking pan or a glass dish with parchment paper
  3. with your hands press the mixture into your pan
  4. Chill in the refrigerator or freezer for at least one hour.
