Ingredientes:
- 1 tablespoon of olive oil
- 1 medium chopped onion
- 1 clove of minced garlic
- 3 teaspoons chopped fresh ginger
- 500g peeled and chopped carrots
- 1 l of vegetable broth
- 1 can of coconut cream or coconut milk
- 1/2 teaspoon salt (or to taste)
Instructions:
- Start heating a frying pan over medium heat. Add oil, onion, garlic and ginger. Cook for about 5 minutes.
- Add the carrots and vegetable broth, bring to a boil. Reduce the heat and cook until the carrots are soft, about 25 minutes.
- Mix the coconut milk (or coconut cream) and beat everything in the blender!
- Add extra salt or olive oil to serve!
Notes: Can be stored in the refrigerator for up to 4 days.

ingredients:
- 1 tbsp olive oil
- 1 medium sized yellow onion chopped
- 1 Clove Garlic, minced
- 3 TBSP Chopped Fresh Ginger
- 1 lb Carots Peeled and Chopped (Baby Carrots Are Also Fine)
- 32 oz Vegetable Stock
- 1 Can of Coconut Cream or Coconut Milk – You Can Sub for Cashew or Almond Milk
- 1/2 tsp salt (or to taste)
instructions:
- Begin Be Heating Up a Large Skillet to Medium High Heat. Melt the Olive Oil, Add Onion, Garlic, and Ginger. Cook for about 5 minutes.
- Add Carrots and Vegetable Stock, Bring to a Boil. reduce heat to simmer.
- Cook until carots are nice and soft, about 25 minutes.
- Slowly Stir in Coconut Milk (Or Coconut Cream).
- Blend it all up! add salt or extra olive oil and serve!
Note: The Soup will keep in the Refrigerator for about 3-4 days.
