Stuff
1 tablespoon of olive oil
1.5 curry powder (spicy or slightly spicy)
2 pieces of garlic, small pieces
2 cups finely chopped kale (or any other greens you like)
1/2 Medium chopped or grated onion (optional)
3 medium carrots (about 500g) chopped into small cubes
1 cup raw brown lentils
2.5 cups of water
1 1/2 cup fresh tomato sauce (used basil ready)
Salt to taste 1/2 cup fresh coriander (Cilantro) Fresh (optional)
- First let the lentils soak for 12 hours and drain the water to soak.
- Cook the lentils with 2 1/2 cups of water
- Reserve the cooked lentils aside when ready
- in a frying pan (use lodge of iron) with medium fire add the oil, onion, garlic and curry. Let it brown.
- Include carrots. Cook for another 5 minutes!
- Add the cabbage and mix well another 1 minute. Then add the lentils and tomato sauce and stir for another 5 minutes.
- Turn off the heat and season with cilantro. Serve over cooked quinoa, rice, crispy bread or vegetables!

2 Garlic Cloves, minced
2 cups finely chopped kale (or any other green you like)
1/2 onion, chopped (optional)
3 Medium Carrots (about 500g 1/2 lb), minced in small cubes
1 cup raw brown lentils
2.5 CUPS WATER FOR COOKING
1 1/2 Cup Fresh Tomato Sauce (I Used Trader Joe’s Marinara)
salt to taste
1/2 XIC Fresh Cilantro (Optional)
instructions:
First leave the lentil soaking for 12 hours and drain the water.
Cook the lentils with 2 1/2 cups water in medium heat (about 15-20min)
Reserve the cooked lentils on the side when ready
in a heated Iron Skillet (I Use Lodge) Add the olive oil, onion, garlic and the curry. Stir and cook for about 2 minutes or so.
Include the carrots and cook for another 5 minutes!
add the kale and mix well for another 1 minute. then add the lentils and the tomato sauce and Stir for another 5 minutes.
Turn off the heat and add cilantro on top. Serves Over Rice, Quinoa, Crispy Bread or Vegetables!
